Family BBQ Ready: Sweet Potato Sliders

Summer is all about spending time outdoors with the people you love most. We were looking for something quick and simple with real ingredients to whip up at our family barbecues this summer. What You'll Need: 
1 large sweet potato
1 lb of ground grass-fed beef
1/2 tsp Celtic salt
1/4 tsp black pepper
1 avocado
1/2 tbsp fresh lime juice
1 tbsp olive oil


Step 1: 
Preheat the oven to 400F (204C). Wash the sweet potato and cut into 1/2 inch slices.


Step 2: 
Line a baking sheet with foil or parchment paper, lightly coat with olive oil and lay out the sweet potato slices. You will need 12 slices. Bake for 20-25 minute, and be sure to flip halfway through.


Step 3: 
In a medium bowl, combine the ground beef, salt, and pepper.


Step 4: 
Form into 6 patties. Heat olive oil or fat of choice in a large skillet over medium heat and add the patties. Cook for about 5 minutes on each side.


Step 5: 
In a medium bowl, mash together the avocado and lime juice. Add salt to taste.


Step 6: 
Assemble each slider by topping a sweet potato, a burger patty, smashed avocado, and another sweet potato slice. Yum!
