The weather is nice, the sun is out until the late hours of the night, and it's the perfect time for an outdoor barbeque. Looking to put a summer twist on one of your favorite easy meals? Our favorite nutritionist & lifestyle expert, Alexandra Catalano (@eatcute), put her sweet twist on the standard taco dinner. Get the gang together for some delicious Grilled Peach & Chicken Tacos! What You'll Need: 2 pounds boned, skinned chicken breast halves (4 to 6) cut into 1-inch chunks 3 large peeled peaches, cut into 8 wedges 2 heads of butter lettuce or radicchio 4 tablespoon of cold pressed olive oil Celtic sea salt for taste Step 1: Soak bamboo skewers in water for 30 minutes. Add enough water (2 to 4 tbsp.) * prepare a grill for medium heat. Step 2: Assemble kabobs. Thread 2 peach wedges and 2 chicken chunks onto a skewer. Repeat, then add a final peach wedge. Thread remaining skewers the same way. Step 3: Drizzle olive oil and sprinkle salt over kabobs. Step 5: Wash the butter lettuce and peel into large, cup-like pieces. Gently pat dry. These will serve as the taco shells for our chicken & peach tacos! Step 6: Assemble your tacos. Place a few pieces of chicken and grilled peaches into the butter lettuce shell. Garnish with your favorite salsa.
