December is a month of cheer... and with that cheer, comes a lot of delicious treats. Unfortunately, these treats aren't always the most healthy. Alexandra Catalano (@eatcute), nutritionist and lifestyle expert, is sharing her twist on Gingerbread Cookies. They're gluten-free and guilt-free. Share them with your family this season! What You'll Need: 2 cup Blanched Almond Flour2/3 cup Arrowroot Flour, plus more for dusting1/2 tsp Salt1/2 tsp Baking Soda1/2 tsp ground Cloves1/2 tsp ground Cinnamon1/2 tsp ground Nutmeg1/2 tsp ground Ginger1/4 cup Pure Maple Syrup3 Tbsp Organic Coconut Oil Step 1: Preheat oven to 350 degrees. In a large mixing bowl, combine blanched almond flour, arrowroot flour, salt, baking soda, cloves, cinnamon, nutmeg, and ginger. Stir ingredients with a wooden spoon to combine well. Step 2: In a small saucepan, bring maple syrup to a boil over medium heat. Add coconut oil to the saucepan, and stir until combined. Remove saucepan from heat and pour into the dry ingredients. Step 3: Mix batter with a wooden spoon until you have formed a dark golden cookie dough, and all the dry ingredients are combined with the pure maple syrup and coconut oil. Step 4: Roll batter into small silver dollar sized balls, and form into circles for your gingerbread cookies. Step 5: Bake gingerbread at 350 degrees for 10 minutes. Remove from oven and cool on a cookie rack. Enjoy!
